It's not quite Winter yet but does feel like it sometimes, doesn't it? Misty and cold mornings, pitch black after 6 pm. It just makes me want to roll up on the sofa in a blanket eating warm Apple Crumble. How lucky that I've got just the right recipe for it ;). Well, actually Dan's mum was so kidn to make a lovelilicious apple crumble for us and used some Superboost which gave it a perfect nutty flavour. There's hardly any better combination than apples and nut butter, or banana and nut butter, or dark chocolate and nut butter or...... ;)
So, here's the recipe:
For the crumble
300 g of plain flour (you can use any type of flour: rice, coconut etc)
175g of brown sugar (it was actually a bit too sweet for me, could have done with a little bit
less sugar, or you might want to try using stevia or maybe coconut sugar instead)
100 g of butter (room temperature)
100 g of Superboost (yum! You can use more depending on how nutty you like it)
For the filling
450-500 gr of apples (we used cooking apples to give the crumble a nice tartness, you can slice them or dice them or chop into little pieces)
1 pinch of cinnamon
1 pinch of mixed spice
1 pinch of vanilla
Some put flour and sugar on the apples as well but you don't have to. It's already quite sweet as it is.
Preheat the oven to 180 degrees (gas mark 6)
Rub the flour, butter, sugar and Superboost together with your hands until it resembles big breadcrumbs
Place apples in ovenproof buttered dish and sprinkle with cinnamon, vanilla and mixed spice. Put crumbles on top and cover apples evenly
Bake in the oven for 40 minutes or until the crumble is nice and brown and the fruit's bubbling away
Serve it with whatever you like. We had greek style yoghurt and it was marvelous!
